## Saffron academy (English)

- [Saffron tea with cardamom](https://saffronsite.com/en/academy/saffron-tea-with-cardamom): For two cups, bloom about a tenth of a gram of saffron (around 45 threads) separately so its colour and aroma are fully released. Let the water rest for a minute after boiling — boiling water dulls saffron’s aroma — then brew the tea with cardamom and stir in the bloomed saffron. It takes about ten minutes.
- [Saffron through history: from Aegean frescoes to the Persian table](https://saffronsite.com/en/academy/history-of-saffron): The oldest known images of saffron picking were painted about 3,600 years ago on the island of Santorini. Saffron was grown in ancient Persia and travelled east and west along trade routes; the European word “saffron” comes from the Arabic “za‘farān”. Today Iran produces around 90% of the world’s saffron.
- [What determines the price of saffron?](https://saffronsite.com/en/academy/what-determines-saffron-price): In Iran, the reference price of saffron comes from trading in saffron deposit certificates on the commodity exchange. The dollar rate (much of the crop is exported), the harvest season, the weather and export demand move it. Prices are usually lowest after the harvest in December and highest in spring and early summer; always compare price per gram with the crocin figure.
- [Sholeh zard: Persian saffron rice pudding with rose water](https://saffronsite.com/en/academy/sholeh-zard-persian-saffron-rice-pudding): Sholeh zard is Iran’s votive saffron rice pudding. Cook the rice longer than usual until it breaks down, add the sugar only once it is fully cooked, and stir in saffron and rose water in the last half hour to keep their aroma. It thickens as it cools, so take it off the heat while still a little runny and decorate with cinnamon and pistachio.
- [From flower to spice: the saffron harvest in Khorasan](https://saffronsite.com/en/academy/saffron-harvest-from-flower-to-spice): Saffron is the dried stigma of the Crocus sativus flower, and each flower has only three. The flowers are picked by hand in late autumn, early in the morning before they fully open; a kilo of dried saffron takes around 150,000 flowers. Most of the world’s saffron grows in Iran’s Khorasan, around Torbat-e Heydarieh, Qaenat and Gonabad.
- [Crocin, safranal and picrocrocin: the science of saffron’s colour, aroma and taste](https://saffronsite.com/en/academy/crocin-safranal-picrocrocin): Three molecules make saffron’s quality: crocin gives colour, picrocrocin taste and safranal aroma. ISO 3632 measures all three by spectrophotometry; category I saffron has at least 200 units of crocin and 70 of picrocrocin, with safranal between 20 and 50. The higher the crocin, the more colour each gram gives.
- [Persian saffron rice with yogurt tahdig](https://saffronsite.com/en/academy/persian-saffron-rice-with-tahdig): Soak the rice in salted water for at least two hours, parboil it until the outside is soft but the centre still slightly firm, and drain. Line the pot with yogurt and egg yolk for the tahdig, steam the rice, and pour separately bloomed saffron over part of it for the golden crown. A cloth-wrapped lid keeps the grains fluffy and dry.
- [Storing saffron: 8 rules to keep its colour and aroma](https://saffronsite.com/en/academy/how-to-store-saffron): Keep saffron in a sealed glass or metal container away from light, moisture and heat — the four enemies of its colour and aroma. Well-stored threads keep their quality for about two years, while powder loses its aroma sooner. The fridge isn’t needed for short-term storage; for more than six months, use the freezer in a fully sealed container.
- [7 ways to tell real saffron from fake](https://saffronsite.com/en/academy/how-to-tell-real-saffron-from-fake): Real saffron slowly turns water golden while its threads stay red; instant red colour means dye. A trumpet-shaped tip, a honey-and-hay aroma and a slightly bitter taste are further signs. Home tests are only indications — an ISO 3632 lab report and the pack’s authenticity code have the final word.
- [How to bloom saffron like a pro](https://saffronsite.com/en/academy/how-to-bloom-saffron): Grind the threads finely with a pinch of sugar, then bloom them with a few ice cubes or hot — not boiling — water and wait at least 20 minutes for the full colour. The ice method is slower but keeps more aroma. Add bloomed saffron at the end of cooking so its aroma doesn’t fade.
- [Negin, Sargol or Pushal? The complete guide to saffron grades](https://saffronsite.com/en/academy/saffron-grades-negin-sargol-pushal): All saffron grades come from the same flower; they differ in which part of the thread is kept. Negin and Sargol are pure red stigma, while Pushal and Bunch keep some of the white style. Choose Sargol or Pushal for everyday cooking and Negin for gifts — but only the crocin figure on a lab report proves quality.

## Glossary (English)

- [Blooming saffron](https://saffronsite.com/en/academy/glossary/blooming-saffron): Grinding saffron and steeping it in ice or hot (not boiling) water for at least 20 minutes so its colour and aroma are fully released.
- [Bunch](https://saffronsite.com/en/academy/glossary/bunch): Whole stigmas and styles tied together like a small bundle; the most traditional way saffron is sold.
- [Corm](https://saffronsite.com/en/academy/glossary/corm): The underground storage organ of the saffron plant, which multiplies every year. Saffron is planted only from corms, and a field usually produces for five to seven years.
- [Crocin](https://saffronsite.com/en/academy/glossary/crocin): Saffron’s water-soluble pigment, which turns food golden. Measured by light absorption at about 440 nm; category I saffron has at least 200.
- [Crocus sativus](https://saffronsite.com/en/academy/glossary/crocus-sativus): The scientific name of the saffron plant: a purple flower of the iris family that sets no seed and spreads only by corms. Each flower has three red stigmas.
- [Drying](https://saffronsite.com/en/academy/glossary/drying): Reducing the moisture of fresh stigmas (about 80%) to below 12%. Around five kilos of fresh stigmas make one kilo of dried saffron, and its aroma forms at this stage.
- [Floral waste](https://saffronsite.com/en/academy/glossary/floral-waste): Bits of yellow style, petal and stamen left in the saffron. In category I saffron it must be very low.
- [Flower picking](https://saffronsite.com/en/academy/glossary/flower-picking): Hand-picking saffron flowers in late October and November, early in the morning before the sun is up. Around 150,000 flowers are picked for each kilo of dried saffron.
- [ISO 3632](https://saffronsite.com/en/academy/glossary/iso-3632): The international saffron standard, setting the specification (part 1) and test methods (part 2) and grading saffron by crocin, picrocrocin and safranal.
- [Konj](https://saffronsite.com/en/academy/glossary/konj): Separated saffron style with almost no colour. Konj is not saffron and is sometimes mixed into saffron to add weight.
- [Lab report](https://saffronsite.com/en/academy/glossary/lab-report): The result of testing saffron to ISO 3632: crocin, picrocrocin, safranal, moisture, ash and impurities, with the batch number and test date.
- [Mesghal](https://saffronsite.com/en/academy/glossary/mesghal): Iran’s traditional unit for weighing saffron, equal to 4.608 grams. One-mesghal packs are the most common saffron pack in Iran.
- [Moisture](https://saffronsite.com/en/academy/glossary/moisture): The percentage of water and volatile matter in saffron. The maximum is 12% for threads and 10% for powder; higher moisture means part of the weight you buy is water.
- [Negin](https://saffronsite.com/en/academy/glossary/negin): The most prized grade by appearance: red stigma only, with long, thick, even threads that are carefully laid side by side to dry.
- [Picrocrocin](https://saffronsite.com/en/academy/glossary/picrocrocin): The compound behind saffron’s slightly bitter taste; part of it turns into safranal during drying. Category I saffron has at least 70.
- [Pushal](https://saffronsite.com/en/academy/glossary/pushal): Stigma with one to three millimetres of yellow style. Each gram colours a little less, but the authenticity of the threads is easy to see.
- [Safflower](https://saffronsite.com/en/academy/glossary/safflower): A plant with orange petals known as “false saffron” and used to fake it. Its petals are flat and have very little colouring power.
- [Saffron](https://saffronsite.com/en/academy/glossary/saffron): The dried stigmas of the Crocus sativus flower; the world’s most expensive spice, giving food a golden colour, a slightly bitter taste and an aroma of honey and hay.
- [Saffron adulteration](https://saffronsite.com/en/academy/glossary/saffron-adulteration): Adding other materials to saffron or selling something else in its place — synthetic dye, safflower, corn silk, dyed style, or oil and sugar to add weight.
- [Saffron deposit certificate](https://saffronsite.com/en/academy/glossary/saffron-deposit-certificate): A document of ownership of saffron delivered to a warehouse approved by the Iran Mercantile Exchange, traded on the exchange. Its trading price is the reference for the daily saffron price.
- [Saffron powder](https://saffronsite.com/en/academy/glossary/saffron-powder): Ground saffron. Its quality depends on the threads it was ground from, and because their shape can’t be seen it carries the highest risk of adulteration.
- [Safranal](https://saffronsite.com/en/academy/glossary/safranal): Saffron’s main aromatic compound — the scent of honey and hay. It is volatile and lost with heat. The standard requires 20 to 50.
- [Sargol](https://saffronsite.com/en/academy/glossary/sargol): The red tips of the stigma only, with no style. The threads are shorter than Negin but colour strongly; the best-selling grade of saffron.
- [Separation](https://saffronsite.com/en/academy/glossary/separation): Separating the three stigmas from the petals on the day of picking. Where the stigma is cut decides the grade: Negin, Sargol, Pushal or Bunch.
- [Stigma](https://saffronsite.com/en/academy/glossary/stigma): The red, trumpet-shaped tip of a saffron thread, which holds almost all of its colour, taste and aroma. Each saffron flower has three stigmas.
- [Style](https://saffronsite.com/en/academy/glossary/style): The white to pale-yellow stem joining the stigmas to the flower. It has little colour or aroma, but its presence in Pushal and Bunch shows the threads are natural.
- [Super Negin](https://saffronsite.com/en/academy/glossary/super-negin): The most uniform, longest Negin threads; the top visual grade of saffron, mostly used for gifts and premium export.
- [Thread](https://saffronsite.com/en/academy/glossary/thread): A single piece of dried saffron — one stigma, with or without style. A gram of Sargol is about 450 threads.
